We used to be a boxed pancake mix kind of house, but with this recipe for homemade pancakes the boxed mix is in the trash. In the video I cook them on the Blackstone. If you don’t have a Blackstone or another type of large griddle, turn your oven on the lowest setting so that you can keep the cooked pancakes warm and serve everyone at once.
Homemade Pancakes
A simple recipe that puts the boxed pancake mixes to shame. Makes 12-15 pancakes.
Ingredients
Dry Ingredients
- 2 cups All purpose flour not sifted, just leveled
- 4 tbsp Sugar
- 4 tsp Baking powder
- 1 tsp Salt
Wet Ingredients
- 2 cups Whole milk
- 4 tbsp Melted unsalted butter
- 2 Large eggs
- 2 tsp Vanilla extract
Instructions
Prep
- In a large bowl whisk together wet ingredients.
- In a medium bowl mix dry ingredients.
- Add dry ingredients to bowl with wet ingredients in 4 portions mixing between each portion.
- Do not over mix the batter, some small lumps are fine.
Cooking
- Butter a skillet or griddle over medium heat.
- Spoon ¼ cup of batter onto the cooking surface for each pancake.
- Cook until bubbles form around the edges and pop, then flip the pancakes and cook for another minute or two and the second side has browned.
- Top pancakes with your favorite toppings!
