Homemade Pancakes
A simple recipe that puts the boxed pancake mixes to shame. Makes 12-15 pancakes.

All purpose flour
not sifted, just leveled

Sugar

Baking powder

Wet Ingredients

Whole milk

Melted unsalted butter

Large eggs

Vanilla extract
Instructions
Prep
In a large bowl whisk together wet ingredients.
In a medium bowl mix dry ingredients.
Add dry ingredients to bowl with wet ingredients in 4 portions mixing between each portion.
Do not over mix the batter, some small lumps are fine.
Cooking
Butter a skillet or griddle over medium heat.
Spoon ΒΌ cup of batter onto the cooking surface for each pancake.
Cook until bubbles form around the edges and pop, then flip the pancakes and cook for another minute or two and the second side has browned.
Top pancakes with your favorite toppings!
