- Immersion Blender
Ingredients
- 4 tbsp Olive Oil
- 2 tbsp Butter
- 1 Medium Onion
- 3-4 Garlic Cloves
- ¼ cup AP Flour
- 6 cups Chicken Broth
- 2 28 oz Cans San Marzano Tomatoes Crushed or Whole Peeled
- 2 tbsp Sugar
- ½ tsp Thyme
- 2 tbsp Butter for Finishing
- Salt and Pepper to taste
Instructions
- Chop onion and mince garlic cloves.
- Add olive oil and 2 tbsp of butter to pot and heat until butter is melted.
- Add onions and cook on low until onions are translucent.
- Add garlic and cook on low for 1-2 minutes.
- Add flour and stir in well, cook for 1-2 minutes.
- Add tomatoes, chicken broth, thyme, salt, and pepper.
- Simmer for 30 minutes.
- Use immersion blender or let cool and use a regular blender to puree the soup until smooth.
- Add 2 tbsp butter and salt and pepper to taste.
- Serve.

This soup is a great base. You could add croutons, basil, rice, or cream before serving.
