I don’t know if there is a better comfort food combination than tomato soup and a nice gooey, buttery grilled cheese. This tomato soup recipe is really easy and the grilled cheese is a bonus. The acid in the soup is a perfect complement to the richness of the butter and cheese in the sandwich.

  • Immersion Blender

Ingredients
  

  • 4 tbsp Olive Oil
  • 2 tbsp Butter
  • 1 Medium Onion
  • 3-4 Garlic Cloves
  • ¼ cup AP Flour
  • 6 cups Chicken Broth
  • 2 28 oz Cans San Marzano Tomatoes Crushed or Whole Peeled
  • 2 tbsp Sugar
  • ½ tsp Thyme
  • 2 tbsp Butter for Finishing
  • Salt and Pepper to taste

Instructions
 

  • Chop onion and mince garlic cloves.
  • Add olive oil and 2 tbsp of butter to pot and heat until butter is melted.
  • Add onions and cook on low until onions are translucent.
  • Add garlic and cook on low for 1-2 minutes.
  • Add flour and stir in well, cook for 1-2 minutes.
  • Add tomatoes, chicken broth, thyme, salt, and pepper.
  • Simmer for 30 minutes.
  • Use immersion blender or let cool and use a regular blender to puree the soup until smooth.
  • Add 2 tbsp butter and salt and pepper to taste.
  • Serve.

Notes

This soup is a great base.  You could add croutons, basil, rice, or cream before serving.
