Instructions
Slice onions and peppers into thin slices.
Peel Potatoes.
Dice potatoes into ½ inch cubes.
Dice the corned beef into ¼-½ inch dice. If the corned beef is homemade and can be shredded, you can shred the corned beef rather than dicing it.
Place potatoes in a microwave safe bowl or plate and microwave 6-8 minutes or until they are just tender but not falling apart. You should be able to cut them or push a fork into them with some resistance.
Saute the peppers and onion with a little oil. Add salt, pepper and garlic powder to taste.
Saute the potatoes in a few tablespoons of oil. Add salt, pepper and garlic powder to taste. Do not turn the potatoes until they have formed a nice crust on one side.
Turn the potatoes once a nice crust has formed, repeat until the potatoes have browned on most of the sides.
Brown the corned beef in a little oil.
Once all ingredients are cooked, combine and add more salt, pepper and garlic powder as needed.
